Loaf:
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 tablespoons lemon zest (See Note.)
3/4 cup lemon juice (See Note.)
1/2 cup unsalted butter at room temperature
1 1/4 cups granulated sugar
3 large eggs
1/3 cup whole milk
Poppy seeds (optional)
Dried lavender flowers (optional)
Almond slivers (optional)
Glaze:
1/2 cup confectioner's sugar
1/3 cup lemon juice* (See Note.)
1. Preheat oven to 350 degrees F.
2. Grease loaf pan and line the bottom and sides of the pan allowing an overhang of about 1 inch. Very lightly grease the flour the parchment. Set prepared pan aside.
3. Combine flour, baking powder, baking soda, and salt in a medium bowl and stir together with a whisk until blended. Add zest and whisk again until blended. Set aside.
4. In a large bowl, beat butter with electric mixer on medium speed for 3 minutes.
5. Gradually add sugar and continue beating for another 3 minutes, stopping periodically to scrape bowl.
6. Add eggs one at a time beating well after each addition. Continue to scape bowl as needed.
7. Blend in lemon juice at medium speed.
8. Add 1/3 of the flour mixture and blend then 1/3 of the milk and blend. Alternate adding flour and milk until all have been added. Mix on low speed until just combined.
9. Add optional ingredients as you desire.
10. Bake in hot oven for 60 minutes until golden and loaf tests clean.
11. Transfer loaf to a wire rack to cool for 10 minutes, then turn loaf out of pan to cool on wire rack.
12. To make the Glaze, in a small bowl whisk together confectioner's sugar and lemon juice to blend completely. Poke several holes into the loaf with cake tester, skewer, or long toothpick. Brush/pour glaze over the warm loaf.
13. Allow to cool to room temperature. Serve and enjoy.
Note: You will use around 6 lemons for the zest and juice. Be sure to zest first, then cut the lemon to extract the juice.
