2 lbs turnips (about 4 medium), peeled and cut into 1-inch chunks
2 garlic cloves, minced
2 tablespoons olive oil
1 teaspoon fresh rosemary, minced
1 teaspoon thyme, minced
1/4 teaspoon salt
1/8 teaspoon pepper
1. Preheat oven to 350 degrees F.
2. Place turnips and garlic on baking pan, drizzle with olive oil, and sprinkle with rosemary, thyme, salt, and pepper. Stir to ensure even distribution of oil and seasonings.
3. Roast turnips, uncovered, for 35 minutes.
4. After 35 minutes, increase oven temperature to 450 degrees F, and roast for an additional 15 minutes or until the turnips start to caramelize and test done when pierced with fork.
