Pan-seared Cod

A large frying pan for stovetop

Ingredients

2 cod fillets

Salt

Pepper

Olive oil (or avocado oil)

2 to 4 tablespoons unsalted butter

1 clove garlic, chopped fine/minced

1 teaspoon dried parsley

1 lemon

Directions

1. Rinse cod in cool water.  Pat dry with paper towels.  Salt and pepper both sides.  Set aside.

2. In large pan, heat oil over medium-high flame.  The oil should be enough to cover the pan, and the pan should be large enough to allow space around the fillets.

3.  Add cod to the pan, skin-side down.  Reduce heat to medium, and cook for 4 minutes.  

4.  Turn cod to sear on the other side.  Add 2 tablespoons butter.  Cook for 4 minutes.

5.  Transfer cod to plate.  Add garlic and parsley and cook for 30 seconds adding more butter if necessary.  You can also add oil if you prefer.

6.  Squeeze the juice of the lemon into the pan and continue cooking, scraping pan bits together to make a sauce.  Add more lemon if you prefer.

7.  Turn flame off. Return cod to pan to reheat and combine with sauce.

8.  Serve.  (Goes well with vegetables, rice, pototatoes.)

Notes

If cod sticks to pan, gently shake the pan and carefully move the fish wee bit to make contact with oil.

You can add finely chopped onions or shallots and other herbs along with the garlic and parsley.

Most fish (haddock, salmon, whitefish) work well in this recipe.
