2 cod fillets
Salt
Pepper
Paprika*
Olive oil (or avocado oil)
1 small onion or 1 large shallot, sliced or chopped finely
1 lemon
1. Pre-heat oven to 350 degrees F.
2. Lightly grease a shallow baking dish (glass or ceramic) with olive oil or butter and set aside.
3. Rinse cod in cool water. Pat dry with paper towels. Season the cod with salt, pepper, and paprika to your liking. Set aside on a plate.
3. Put onions in the the baking dish. Add the cod. You can add more seasonings if you like.
4. Cover the fish and onions with oil and squeeze the juice of half the lemon over everything.
5. Put in hot oven to bake for 15 - 20 minutes.
6. Remove from oven. Squeez 2nd half of lemon over all. Serve.
*Feel free to substitute paprika with parsley or other aromatics or your choice.
