4 - 4 1/2 cups old-fashioned rolled oats
3/4 cups broken walnuts
3/4 cups broken pecans
3/4 cups broken almonds or slivered almonds
3 tablespoons flaxseeds
1/4 - 1/2 cups sunflower seeds
1/4 - 1/2 cups pumpkin seeds
1 heaping tablespoon cinnamon
1/8 - 1/4 tsp nutmeg
1 teaspoon salt
1/2 cup sunflower oil
1/2 cup maple syrup
2 teaspoons vanilla
1/2 cup unsweetened shredded coconut
2/3 cup dried blueberries
1/4 - 1/3 cup currants
1. Place rack in center of oven. Preheat oven to 350 degrees F.
2. Line a large rimmed baking pan with parchment paper.
3. In a large bowl, combine oats, nuts, seeds, cinnamon, nutmeg, and salt. Stir until well-combined.
4. Pour oil, maple syrup, and vanilla into mixture in bowl. (Do not add coconut, blueberries, or currants at this time.) Stir until well-combined.
5. Spread granola evenly into prepared baking sheet and press down gently with back of spatula or large spoon.
6. Bake in hot oven for 12 - 15 minutes. Remove pan from oven. Stir in coconut. (At this time, you can add the blueberries and currants or wait until after baking.) Press down again to even layer. Return pan to oven and bake for 14 - 16 minutes or until granola starts to toast.
7. When you can smell the granola and see that it starts to brown, remove it from the oven. Allow to cool in pan for at least 45 minutes. (It will continue to get crispy as it cools.) If you have not stirred in the blueberries and currants at step 4, stir them in now. Let the granola rest for a few minutes longer until completely cooled.
8. Enjoy eating with any type of milk or yogurt or however you desire. Stores well in an airtight container at room temperature for 2 weeks, and can be refrigerated in a sealed container for up to 3 months. Can be frozen for longer.
I break the nuts with my fingers, but you can chop them as you desire.
Minimal stirring allows the granola to have clumps. Stir in any way that you prefer to obtain the consistency you desire.
You can use any combination of nuts and dried fruit as desired.
