Green Beans with Shallots and Herbs

Herbed butter can be prepared and chilled in the refrigerator or freezer for later use.

Yields

8 servings

Ingredients

2 to 3 lbs green beans, washed and trimmed

3 tbsps unsalted butter, softened

1/4 cup finely chopped shallots

3 tbsps finely chopped parsley

3 tbsps finely chopped tarragon

Salt and pepper to taste

Directions

1.  In a small bowl, blend the butter with the shallots, parsley, tarragon, salt, and pepper.  Set aside or chill for later use.

2.  Boil or steam green beans until crisp tender.  Drain and transfer to a large bowl.

3.  Add the herbed butter to the green beans and mix until the green beans are completely coated.  Serve warm.

Notes

This recipe is a great side for any fish or meat.  Other herbs can be used instead of parsley and tarragon.
