Parchment or other stick proof lining for cookies sheets
Approximately 3 dozen cookies
2 1/2 cups oat flour
1 scant cup rice flour
2 cups rolled oats, regular or quick
2 teaspoons xanthan gum
1 1/2 teaspoons backing soda
1 teaspoon salt
1 teaspoon or more cinnamon
1 cup unsalted butter, room temperature
1/2 cup granulated sugar
3/4 cup light brown sugar
3/4 cup coconut sugar
2 teaspoons vanilla
2 eggs
1 lemon (if using extra large eggs, omit the lemon)
1 cup chopped walnuts
2 cups chocolate chips
1. Preheat oven to 350 degrees F.
2. Line baking sheets with parchment paper or other stick proof lining.
3. Combine first seven (7) ingredients in a large bowl and whisk together. Set this flour mixture aside.
4. In large mixing bowl, beat butter. Beat in sugars. Beat in vanilla and eggs. Mix everything well. If not using lemon, mix at high speed.
5. Squeeze the juice of the lemon into the mixture and beat until well blended at high speed.
6. Add flour mixture and blend well. Mix in nuts and chocolate chips.
7. Use an ice cream scoop or 1/4 measure to form balls of dough. Drop onto prepared sheets. Gently press the balls down with palm of hand.
8. Bake in hot oven for 14 - 16 minutes or until golden brown. Remove from oven; wait two (2) minutes before transferring cookies to wire racks to cool.
1. Use all organic ingredients whenever possible.
2. You can make your own oat flour by processing oats in a food processor.
3. You can include other spices along with the cinnamon such as nutmeg and cloves.
