Cannellini Bean Dip

Requires food processor or blender

Yields

1 1/2 cups

Ingredients

1 15-oz. can cannellini beans (or prepare your own)

1 roasted garlic bulb (Recipe below.)

1/4 c chopped mint

2 tbsps fresh lemon juice

2 tbsps or more extra virgin olive oil

1 tsp ground cumin


Directions

1.  Drain the beans, do not rinse.  Place them into the food processor bowl.

2.  Squeeze the cloves out of the bulb of garlic into the food processor bowl.

3.  Add the mint, lemon juice, olive oil, and cumin and process until smooth.

4.  Drizzle a little olive oil over the dip and serve with cut vegetables. 


Recipe for Roasted Garlic Bulb:


Preheat oven to 350 degrees F.  Cut the top from a garlic bulb, drizzle with olive oil (add herbs and spices if desired).  Wrap it with foil or put on oven-proof plate and roast in oven for 30 minutes or until soft.
